This coffee comes from five smallholder producers in San Rafael del Norte and San Sebastián de Yalí, Jinotega, Nicaragua. Their parchment forms a field blend dried at La Concordia. Grown at 1100–1400 MASL and roasted to a light-medium House Omni profile, it is suited to filter, pour-over and espresso.

Each producer selectively picks, floats and pulps the coffee on their farm, then typically ferments it for 20–36 hours. The wet parchment is delivered to Caravela’s La Concordia facility in Jinotega and dried on three-level shaded raised beds for 12–25 days under controlled conditions until it reaches 10–11% moisture. It is then milled at La Estrella in Ocotal.

Sweet, sugary aromatics recall fresh fudge, toasted pecans and stewed apples. The cup is rich and comforting, with pistachio, melted milk chocolate and macadamia, balanced by gentle stewed Bramley apple acidity and a little black tea in the finish. As it cools, fresher red apple and milk chocolate oat-biscuit notes emerge.
