Coffee Story
We’re growing to love the profile of the naturals that come from Fredy Orantes’ farm. This GEISHA is surprisingly good for Guatemala. Although it does not sit at the more floral end of the cultivar’s expression, it is exceptionally sweet, intensely fruity and absolutely hits the mark.
 
In the Cup
The aromatics are dominated by bold purple-fruit notes, reminding us of Turkish delight alongside grape and cherry gummy sweets.
In the cup, the influence of the processing is distinctly present. We find strawberry daiquiri, cocoa butter and mixed tropical juice, accompanied by a rich, syrupy body. As the coffee cools, its profile becomes more open, revealing exceptionally sweet notes of mixed jelly beans and watermelon, followed by a gently herbal florality reminiscent of Mosaic hops.
 
Processing Method
Only fully ripe red cherries are selected. After picking, the cherries are soaked in water to remove dust and floaters, including immature or malformed beans. This stage also lowers the microbial count and helps equalise the temperature of the cherries.
The cherries are then placed on raised beds to dry. Because the season was cooler and cloudier, the drying process was carefully managed over 25 to 30 days. The cherries were laid out at 10 a.m. and collected each afternoon at 2 p.m., concentrating the drying process within the warmest part of the day. They were also turned frequently to ensure an even loss of moisture.
Once dried, the coffee pods were delivered to the dry mill in Fraijanes, where they were milled, sorted and prepared for export.
