This Red Bourbon comes from Dahwe CWS in Rwanda’s Southern Province, supplied by around 1,400 smallholders. The station also serves as a model farm and seedling distribution centre. It is recommended for filter and turbo espresso.
Cherries are hand-sorted, floated and depulped. The parchment ferments in concrete tanks for an average of 12 hours with regular agitation, then passes through grading channels for washing and density sorting. A final hand-sort precedes around 30 days of drying.
Black tea, apple, lemon and tomato aromatics give way to roasted plum, cherry, apple and tangerine. Cooling brings fresher Cox Pippin apple and the floral citrus character of Earl Grey Tea.
